They are computed the moment you open the page, from the real publish date: within 14 days is NEW, past 120 days is OLDER. Because it is dynamic, the page can never advertise an old post as new.
Nothing breaks. A failed fetch leaves the previous data untouched instead of overwriting it with an empty file. If there is no data at all, the page still loads and says so plainly.
